Cozy Ramen Bowl

When the weather is cold and dark outside there's nothing I want more than a hot bowl of delicious soup to warm me from the inside out. You'll love this recipe if you enjoy ramen and want to make an easy bowl of it at home. This is a quick and easy recipe to follow.

I tend to always make too much and this ramen is also good a day or two later.



So we're jumping right into it!

Time it should take:

Prep: 15 min

Cook time: 20-25 min

Ingredients:

  • 1 can (8oz) full fat coconut milk

  • 8 oz vegetable broth

  • 1 package of ramen noodles

  • 4 eggs

  • 1 bunch broccolini

  • 1 bunch baby bok choy

  • 3 radishes sliced

  • 1 red bell pepper sliced

  • Sesame seeds for garnish

  • 1 tsp Turmeric

  • 1 tsp paprika

  • 1 tbsp olive oil

Instructions:

Prepare all of your vegetables. Slice the bell pepper, radishes, separate the broccolini and bok choy into sizes you'd like. In a large pot add olive oil on medium heat and , add your bell pepper, radishes, broccolini. Let simmer for about 2 min and pour in your vegetable broth and coconut milk. Stir until it's smooth and add the turmeric and paprika. Add in the ramen noodles and bok choy to the pot. While all of that is simmering on medium low heat. Add about 1 inch of water to a pot and let it boil. Once the water is boiling drop your 4 eggs into the water, cover and let boil for exactly 6 min. Remove from water and run under cold water until you can handle them to gently peel the eggs. Set aside.

Once the noodles are soft or al dente, remove from heat, separate into four containers slice your soft boiled egg and place it on top of each and garnish with sesame seeds. Enjoy!
